As inspections resume, it is a good time to ensure you are up to date and ready for an Environmental Health visit.

Your Environmental Health Inspection is split into three main headings and you need to score highly in all three areas to achieve/retain a Level 5 Food Hygiene Rating. Here is a reminder of the three areas:–

Compliance with Food Hygiene and Safety Procedures

How hygienically the food is handled – how it is prepared, cooked, cooled, stored and what measures are taken to prevent food being contaminated. Are you following your Food Safety Management System? Are your fridges organised to avoid cross contamination between raw and ready to eat foods.

Compliance with Structural Requirements

The condition of the structure of the premises including cleanliness, layout, lighting, ventilation, equipment, toilet facilities etc.  Check you have no flaking paint on ceilings or walls, check there is no dirt or food debris under equipment, check there are no porous surfaces on food preparation areas, check kitchen is clean and organised

Confidence in Management

Your Food Safety HACCP system.  Are you up to date with the latest legislation and best practice?  Is all your paperwork accurate and up to date?  Are you demonstrating that you do what you say you do?

In the latest FSA consumer attitude tracker, 68% of respondents reported checking the rating of a food venue by looking at the door or window. Of course, all food hygiene ratings are available for viewing by the public on the FSA website. With the current situation, hygiene is a high priority for consumers making it a top priority to have, and keep, a Level 5 Food Hygiene rating on your door.
